Cranberry and White Chocolate Slice
A sweet slice of balance, perfect for the festive season (or your hormone health!)
Whether you're team Thanksgiving or a full-blown Christmas lover, this cranberry and white chocolate slice is a delicious way to use up leftover cranberry sauce and sneak in ingredients that support vaginal and urinary tract health. Yes, it contains white chocolate - but let’s talk about balance.
The Importance of Balance: Nourishment, Not Perfection
White chocolate isn’t exactly a nutrient-dense superfood, it’s rich in sugar and fat, and lacks the antioxidants found in dark chocolate. But health is never about perfection. Instead, it’s about what we can add to make indulgent foods more nourishing.
In this recipe, we pair white chocolate with whole oats (rich in beta-glucans for gut and hormone support), almond meal (a source of protein and vitamin E), Greek yoghurt (for gut-loving probiotics and calcium), and cranberries, more than just a tart festive fruit.
Cranberries: A Win for Vaginal and Urinary Tract Health
Cranberries have long been used to support urinary tract health, but we now have good evidence to support this traditional wisdom. A 2023 systematic review and meta-analysis published in Cochrane Database of Systematic Reviews found that cranberry products reduced the risk of recurrent UTIs, particularly in women, children, and people with recurrent infections (Alves et al., 2023).
Cranberries contain proanthocyanidins (PACs), which are thought to prevent certain bacteria, especially E. coli, from sticking to the bladder wall. Beyond UTIs, cranberries may also support the vaginal microbiome due to their polyphenol content, which helps maintain microbial balance and reduce inflammation (Singh et al., 2020).
Got Leftover Cranberry Sauce?
The festive season is full of odds and ends - half a jar of cranberry sauce, dried fruit from your Christmas cake prep, or Greek yoghurt nearing expiry. This slice is the perfect "what can I do with this?" recipe. Plus, it stores well in the fridge, travels nicely, and looks gorgeous on a holiday table.
Cranberry and White Chocolate Slice
Ingredients
275 g rolled oats
200 g desiccated coconut
200 g almond meal
150 g raisins + 150 g dried cranberries, or 300 g dried cranberries total
150 g cranberry sauce (plus extra for topping)
400 g white chocolate
1 tbsp extra virgin olive oil
100 g Greek yoghurt
Instructions
Preheat oven to 160°C (fan-forced).
In a food processor or blender, blitz the oats, coconut, almond meal, and dried fruit (either the combination or just cranberries) until a fine crumb forms.
Add 100 g of the cranberry sauce and blend again until a sticky dough forms.
Press the dough into a lined or silicone slice tray, smoothing into an even layer.
Bake for 15–20 minutes or until golden brown on top. Allow to cool.
Melt the white chocolate gently, stir through the olive oil and Greek yoghurt until smooth.
Pour over the cooled base.
Swirl through extra cranberry sauce using a spoon or pipe into lines and drag a skewer in the opposite direction for a petal effect.
Chill in the fridge until completely set, then slice into 24 pieces.
